Cheese made from pasteurised sheep´s milk, matured for a minimum of 6 months, of an intense yellow appearance, characteristic of the milk from the sheep grazing in the fields of Castile-La Mancha.

Medium bite and aromatic flavour, with pleasant taste on the palate and with nuances of nuts. It has a firm and compact consistency.
