EVOO 100% ARBEQUINA WITH NATURAL WHITE TRUFFLE

Aromatized with natural White truffle, resting and macerating inside the bottle which makes of this Extra Virgin Olive Oil a olive a luxurious condiment adding a very special exotic touch to your dishes. Truffles belong to the family of Fungus and they grow in symbiosis with the roots of trees such as walnut, oak, holm oak and chestnut trees.  White truffle is the most sought-after variety, due to the difficulty in finding it. EVOO 100% ARBEQUINA WITH NATURAL BLACK TRUFFLE

Unfiltered. With natural Black truffle, resting and macerating inside the bottle. Black truffle is found mainly in Spain in particular in the Teruel region, but it also may be found in the Périgord region in France. It has a strong flavour but less so than the white truffle for this reason it is very good to season salads, just adding a few drops after it has been dressed with Extra Virgin Olive oil and Balsamic. Balsamic vinegar and black truffle are an ideal combination. This product may also be used for fresh vegetable confits, for mushroom dishes or balsamic reduced sauces.  

EVOO COUPAGE HIGH LEVELS OF POLYPHENOLS

This EVOO is a coupage of the best olives selected for their high levels of polyphenols (Oleocanthal, Tyroxol and Hydrotyroxol), giving them not only their excellent flavour, fruity and intense, but also innumerable health benefits (Oleocanthal- natural anti-inflammatory reducing the risk of cardiovascular and cerebrovascular thrombosis-, Tyroxol and Hydroxityrosol -considered among the strongest natural antioxidants, absorbing ten times more free radicals than green tea  and two times more than the coenzyme Q10-, needed to prevent cancer and ageing). This is a star product in the Mediterranean diet.

EVOO COUPAGE

On the first day of harvest for each olive variety, the pieces of land are carefully selected to produce the EVOO individually.  Subsequently they shall be mixed according to the oil expert criteria. The outcome is a fruity, intense Extra Virgin Olive Oil, very aromatic and well balanced. It has a special taste of green fruit and soft spicy due to the presence of polyphenols.

EVOO COUPAGE OF PICUAL AND ARBEQUINA

Using the best olives harvested at the beginning of the season, Extra Virgin Olive Oil is separately extracted from this FAMILY RESERVE using Picual and Arbequina olives. Subsequently they are mixed following the oil expert criteria. The result is an intense, aromatic, fruity and balance Extra Virgin Olive Oil. It has a soft spicy taste due to the levels of polyphenols.

ORGANIC CORNICABRA EVOO

ORGANIC Extra Virgin Olive Oil made from Cornicabra variety of olives. Collected at the earliest time of harvest and of cold extraction. This is a very intense Extra Virgin Olive Oil, with a taste of ripe fruits such as apples, quince, juicy tomatoes and slightly spicy very well balanced with a soft almond bitterness. Ideal for cold finishing touches and in general, for frying, roasting and barbecues.

The Arbequina olive variety originates in Arbeca, in the Region of Les Garrigues and has adapted exceedingly well to the land of the región. The main characteristics of this olive juice are its fluidity and extraordinary fragrance. This is an oil with slight apple flavour, not very bitter or spicy and with a sweet taste. The most demanding palates love it for its softness and freshness.

EVOO 100% MANZANILLA CACEREÑA

The juice obtained from the variety of olives called Manzanilla Cacerena, harvested when the fruit is beginning to change colour (when it is at its optimum ripeness) is well balanced between spicy, bitter, sweet and green fruit reminiscent of grass freshly cut. It also has a green apple and tomato flavour making of this oil an authentic perfume for our best dishes.

The olives are harvested early (October) to guarantee the highest level of polyphenols (antioxidants). The juice is cold extracted within 3 hours from the moment the olives are harvested to preserved the taste and qualities.  It is worth highlighting the high concentration of Oleic Acid, which is a monosaturated fatty acid belonging to the series Omega9. Olive oil has a concentration of Oleic Acid of between 55 and 80%, in Manzanilla Cacereña it varies from  78 and 80%. Oleic Acid reduces heart disease. Very limited production. Very versatile.

It is very good uncooked with salads, vegetables and grilled fish, or to complement a good breakfast.

EVOO COUPAGE OF OLIVES: HOJIBLANCA, PICUDA AND PAJARERA

Family harvest and mill. Olives are harvested when still green (natural coupage on the olive tree) to guarantee the highest polyphenol content (antioxidants). Intense fruity flavour; Taste of green olive and tomatoes. Very well balanced. Ideal with mixed salads, blue fish, wild game, stews and Spanish omelette. Oil extracted within 3 hours from harvest. Very limited production.

Unfiltered. Ideal for frying at lower temperatures. Crunchy high quiality fried dishes. Between 30% and 80% performance increase.

GRAND CRU COUPAGE FROM THE BEST EVOO SELECTION

The Grand Cru Coupage is a product reserved for the most demanding palates.  Made with a combination of Extra Virgin Olive oils cold extracted from 4 different olive varieties: Arbequina, Hojiblanca, Picudo and Ocal, selected for their high polyphenol content. This Grand Cru is a Premium Extra Virgin Olive oil very soft, dense and elegant. Very versatile.

ORGANIC EVOO 100% OCAL

Unfiltered. Very light ORGANIC EVOO. It has a golden colour but not very shiny. Extremely soft flavour, intensely fruity and wide, invoking fresh vegetables, fresh artichokes, nuts and tomatoes; slightly bitter and with a hint of chilli. The aftertaste reminds us of dry fruits, in particular green nuts. It has medium to high levels of oleic acid (71,5%). High fluidity. High polyphenol content.

EVOO 100% OCAL

Unfiltered. Very light Extra Virgin Olive Oil. It has a golden colour but not very shiny. EVOO 100% PICUDO

Unfiltered. The olive Picudo variety is one of the varieties with most olive tasting points. Highly oxidable, the oil extracted from this variety is very delicate, not bitter and intensely fruity, with many tinges; it produces very authentic sensation in the palate, soft flavours and aromas evoking exotic fruits, tomatoes and even apple and almonds. It has a very high content of linoleic acid and the taste fluctuates between intense fruit to soft sweet and the colour is yellow with hints of green.

ORGANIC EVOO 100% HOJIBLANCA

The variety Hojiblanca originates in Cordoba. This is an Unfiltered Organic Extra Virgin Olive Oil. It is slightly bitter and spicy, leaving a sweet aftertaste. It has ripe fruit aroma and a hint of avvocado. Soft flavour. It has a great personality and due to its abundance of aromas it is ideal to bring out the flavour of blue fish, such as salmon and tuna, and to be used in fish or meat carpaccio. The intense flavour of this EVOO together with the enormous diversity of its nuances, make of it the ideal oil to be used uncooked, marinating any dish, but it is not recommended for cooking with the exception of confectionery and desserts.

SMOKED EVOO 100% ARBEQUINA

Unfiltered. Cold smoked with beech and oak, without altering its organoleptic properties and fruitiness.  The Arbequina olive variety originates in Arbeca, in the Region of Les Garrigues and has adapted exceedingly well to the land of the region.

The main characteristics of this olive juice are its fluidity and extraordinary fragrance.  Medium intensity green fruit taste. 

The most demanding palates love it for its softness and freshness. Very well balanced. Ideal to add finishing touches to many dishes.

EVOO 100% ARBEQUINA

This variety of olives is the healthiest of them all, among other things, because it has an extremely high level of antioxidants. It has a very high level of oleic acid and antioxidants, in particular polyphenols, preventing heart disease and other illnesses. It also strengthens cells assisting them to combat ageing and lengthening life. They are harvested very early (October) guaranteeing a brighter colour and stronger flavours. It has a very high level of polyphenols, approximately 800-900 per litre. Very fruity and aromatic with a medium level of bitter and spicy notes. With a very intense flavour, it is ideal for fatty fish, scrambles, any cooked dish, legumes and grilled vegetables.  It is very good for frying due to its high level of resistance and great stability. Additionally, once it reaches frying temperature, due to its high level of resistance it does not produce smoke or smell. It improves performance compared to other oils in approximately 50%. Its fresh herbs aroma and slight spiciness, makes of this oil the ideal companion for roast lamb, pork or roast turkey.  This oil is extracted within 3 hours from the time of harvest. Very limited production.
